Cheese Corn Tikki is a yummier snack with the goodness of corn and cheese combined with aromatic spices. Step 1: Prepare the mixture
Crush the corn: If you are using fresh corn, steam it for a few minutes. If you are using frozen corn, thaw it. In your blender, coarsely pulse the corn to leave some whole kernels for texture.
Mix ingredients: In a large mixing bowl, mix ground corn, grated cheese, mashed potatoes, chopped onion, coriander, green chilies, cumin powder, red chili powder and salt altogether. Mix very well so that all the ingredients get evenly incorporated.
Step 2: Shape the tikkis
Take a small quantity of the mixture and shape it into a flat round patty (tikki). If you want that extra crunchy touch, then coat each tikki with breadcrumbs.
Chill this for around 30 minutes if you want them to hold well together. The chilling will not be necessary but will help in retaining the shape when cooked.
Step 3: Cook the tikkis
Heat the oil: Using a non-stick skillet, pour in groundnut oil. Make sure the oil is hot, not smoking.
Fry the tikkis: Put the tikkis in the pan without filling the skillet. Fry them for around 3-4 minutes of each side or until they are golden brown and crispy. Add more oil if you feel the need.
Step 4: Serve
Draining excess oil: Transfer the tikkis to a paper towel to absorb all excess oil after cooking.
