Ingredients
For dosa batter:
- 2 cups parboiled rice
- 1/2 cup urad dal (split black gram)
- 1/2 teaspoon fenugreek seeds
- Water (as needed)

For potato masala filling:
- 3 medium potatoes (boiled and mashed)
- 1 onion (sliced)
- 1 green chili (chopped)
- 1 teaspoon mustard seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon chana dal (optional)
- 1 teaspoon urad dal
- 8-10 curry leaves
- 1 tablespoon groundnut oil
- Salt (to taste)
- Fresh coriander (chopped, for garnish)
Instructions
Wash and soak the rice, urad dal, and fenugreek seeds in water for 6-8 hours or overnight. Drain and blend the mixture into a smooth batter, adding water as required. Transfer the batter to a bowl, mix in salt, and let it ferment overnight (8-12 hours) in a warm place.
Heat groundnut oil in a pan and add mustard seeds, allowing them to splutter. Add chana dal, urad dal, curry leaves, and green chili. Sauté until golden brown. Stir in sliced onions and cook until soft and translucent. Add turmeric powder and mashed potatoes, mixing well. Season with salt and cook for another 2-3 minutes. Garnish with fresh coriander and set aside.
Heat a non-stick or cast-iron tawa (griddle) and lightly grease it with groundnut oil. Pour a ladleful of batter onto the center of the pan and spread it evenly in a circular motion to create a thin crepe. Drizzle some groundnut oil around the edges and cook until golden brown. Place a portion of the prepared potato masala in the center and fold the dosa in half. Serve immediately with coconut chutney and sambar.
