  • 1/4 cup cold unsalted butter, cubed 
  • Salt to taste 
  • Cold water 

Instructions: 
  1. Make the filling: Heat 1 tablespoon peanut oil in a pan. Add cumin seeds and let them crackle. Add onion and green chili (if using), and cook until soft. 
  1. Add ginger-garlic paste and cook for a minute. Add potatoes, peas, carrots, green beans, and spices. Cook for 5-7 minutes until veggies are tender. Stir in coriander leaves. Let it cool. 
  1. Make the pastry: In a bowl, mix whole wheat flour, all-purpose flour (if using), and salt. Add cold butter and mix until it looks like crumbs. 
  1. Gradually add cold water, 1 tablespoon at a time, until the dough forms. Knead until smooth. Wrap in plastic and chill for 30 minutes.

  1. Shape the mixture into small patties. Coat each patty with breadcrumbs. 
  1. Heat peanut oil in a pan over medium heat. Fry the patties for 2-3 minutes per side until golden and crispy. 
  1. Drain on paper towels. 
  1. Serve hot with ketchup or your favorite chutney.
