Instructions

Step 1: Prepare the paneer
  • Heat 1 tablespoon of groundnut oil in a non-stick pan.
  • Add the paneer cubes and stir-fry until they turn golden brown on all sides.
  • Sprinkle turmeric powder, red chili powder, and a pinch of salt. Toss well to coat the paneer evenly. Set aside.
Step 2: Cook the noodles
  •  Bring a large pot of water to a boil and add a pinch of salt.
  • Add the noodles and cook as directed, about 5-7 minutes. Make sure they are al dente.
  • Drain the noodles and rinse under cold running water to stop further cooking. Toss them with a teaspoon of groundnut oil to prevent sticking.

Step 3: Prepare the vegetables

  •  Heat 2 tablespoons of groundnut oil in a wok or large skillet over high heat.
  • Add the minced garlic and chopped ginger. Stir-fry for 30 seconds until fragrant.
  • Add the onions, carrots, capsicum, and cabbage. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.

Step 4: Mix everything together

  •  Turn down the heat and mix the cooked noodles into the wok.
  • Pour in the sauce mix (soy sauce, chili sauce, tomato ketchup, vinegar, black pepper, and a pinch of salt).
  • Mix everything together until the noodles and vegetables are well coated with the sauce.
  • Add the fried paneer cubes and gently mix them so that they do not break.

Step 5: Garnish and serve

  •  Turn off the heat and sprinkle chopped spring onions on top.
  • Serve hot with a side of chili vinegar or your favorite dipping sauce.

Tips for the best paneer chowmein:

  • Opt for fresh paneer to achieve a soft and creamy texture.
  • Homemade paneer works best.
  • Stir-fry veggies on high heat to make it crunchy and colorful.
  • Change up the spice levels: make it spicier with more chili sauce, milder with less!
  • I love using groundnut oil in this recipe, but use sesame oil if you wish for a different flavour.
  • Paneer Chowmein is sure to leave one’s taste buds very satisfying as a meal as much as it would impress when in a party.
