Ingredients:
For the Paneer:
- 200 grams paneer, cut into small cubes

For the Chowmein:
- 200 grams noodles preferably wheat
- 3 tablespoons groundnut oil
- 2 cloves garlic, minced
- 1-inch piece of ginger, finely chopped
- 1 medium onion, sliced
- 1 medium carrot, julienned
- 1/2 cup capsicum (bell peppers), sliced
- 1/2 cup cabbage, shredded
- 1/4 cup spring onions, chopped (for garnish)
Sauce Mix:
- 2 tablespoons soy sauce
- 1 tablespoon chili sauce
- 1 tablespoon tomato ketchup
- 1 teaspoon vinegar
- 1/2 teaspoon black pepper powder
- Salt to taste

Instructions
Step 1: Prepare the paneer
- Heat 1 tablespoon of groundnut oil in a non-stick pan.
- Add the paneer cubes and stir-fry until they turn golden brown on all sides.
- Sprinkle turmeric powder, red chili powder, and a pinch of salt. Toss well to coat the paneer evenly. Set aside.
Step 2: Cook the noodles
- Bring a large pot of water to a boil and add a pinch of salt.
- Add the noodles and cook as directed, about 5-7 minutes. Make sure they are al dente.
- Drain the noodles and rinse under cold running water to stop further cooking. Toss them with a teaspoon of groundnut oil to prevent sticking.
Step 3: Prepare the vegetables
- Heat 2 tablespoons of groundnut oil in a wok or large skillet over high heat.
- Add the minced garlic and chopped ginger. Stir-fry for 30 seconds until fragrant.
- Add the onions, carrots, capsicum, and cabbage. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.
Step 4: Mix everything together
- Turn down the heat and mix the cooked noodles into the wok.
- Pour in the sauce mix (soy sauce, chili sauce, tomato ketchup, vinegar, black pepper, and a pinch of salt).
- Mix everything together until the noodles and vegetables are well coated with the sauce.
- Add the fried paneer cubes and gently mix them so that they do not break.
Step 5: Garnish and serve
- Turn off the heat and sprinkle chopped spring onions on top.
- Serve hot with a side of chili vinegar or your favorite dipping sauce.
